Cookie Swap at Laura's and a Recipe

We came, we ate, we visited Laura from Decor to Adore and her adorable Storybook Cottage.

As you can see she is just as pretty and gracious as she is on her blog! So gracious she invited a group of Dallas area bloggers over to the Storybook Cottage for a cookie swap and luncheon.

Look at her sweet London inspired sunroom. It's precious isn't it? I did not want to leave it!


The table was set and everyone brought the yummiest of goodies.


Today I wanted to share the recipe for the quinoa salad I brought.
It is my version of the recipe for the quinoa salad from
Start Restaurant in Dallas
.It is delicious cold but just as yummy room temperature which makes it a winner for a potluck.


1 cup Fresh Parsley
1 cup Fresh Cilantro
2 cups Broccoli Crowns
1 cup Red Onion
1 cup Cherry Tomatoes
1/2 cup Pitted Kalamata Olives
4 cups Cooked Quinoa
Note:Use a good quality quinoa like Bob's Red Mill
1 cup Vinaigrette Dressing
1 1/2 cups Feta Cheese

Vinaigrette Dressing
1 cup Extra Virgin Olive Oil
1 2/3 cups Canola Oil
1 cup Apple Cider
The Juice of 1 Small Lemon
1 tablespoon Minced Garlic
1/2 teas Dry Mustard
1/2 teas Black Pepper
1 teas Salt

I mix this in a shaker blender. It makes a lot and you will have leftovers but it is a very good basic vinaigrette so you will use it.

Preparation
Chop Parsley, Cilantro,and Broccoli
Dice Red Onion
Slice Tomatoes in Half
Slice Olives
Toss Quinoa together with Olives, Parsley, Cilantro,Broccoli,Onion,and Tomatoes. Pour 1 cup of Vinaigrette over Quinoa mixture.
Fold in Feta Cheese and chill. Enjoy

Everyone NEEDS to make this salad. I thought I didn't like quinoa but I do IF it is Lisa's salad. The Mr. loved it just as much.
This book nerd celebrated Miss Austen too. :)
