This recipe is from the 1987 version of The Southern Living Cookbook. The recipe calls for buttermilk which I never seem to have in the house when we are wanting pancakes. I have, at various times, substituted sourcream, yogurt and just plain ole milk and they always turn out beautifully.
1 cup all purpose flour
1 teas baking powger
1/2 teas baking soda
1/2 teas salt
1 tablespoon sugar
1 cup buttermilk
2 tablespoons vegetable oil
Beat egg. Combine flour, baking powder, soda, salt and sugar; add to egg. Add buttermilk (or substitute) and oil, beating until mixture is smooth.
For each pancake, pour about 1/4 cup batter onto hot, lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges lightly browned. Makes about 8 pancakes.
