This recipe is from Giada De Laurentis. It's not really a cupcake in the traditional sense of the word. More pasta, individual quiche-y like. It was really easy and quite yummy! Just a little tip... Do not overcook and don't be stingy with the olive oil!
The Recipe:
vegetable spray
2 cups dried bread crumbs
1 tbsp olive oil, plus extra for drizzling
8 oz ground turkey
1/2 teas kosher salt
1/4 teas ground pepper
8 oz small pasta, like elbows
2 cups grated parmesan
1 1/2 cups grated white cheddar (I used mozzarella)
1 cup cherry tomatoes, quartered
2 cups blanched chopped broccoli
1 lb blanched asparagus, blanched and cut into 3/4 in pieces

Directions:
Preheat the oven to 375. Spray 2 (12 cup) muffin tins with vegetable spray. Using 1 cup of the bread crumbs, coat the inside of each muffin cup with bread crumbs, shaking off excess.
In a med skillet, heat 1 tbsp olive oil over med hi heat. Add ground turkey, i/2 teas salt and 1/4 teas pepper. Cook, stirring frequently, until cooked through, about 5-8 min. Set aside.
Bring a lg pot of salted water to boil over high heat. Add pasta and cook until tender, about 8-10 min. Drain and add to lg bowl. Stir in the cooked turkey and the cheeses. Season with salt and pepper to taste. Spoon the prepared pasta mixture into muffin tins, filling about 2/3 full. arrange a few pieces of tomato, broccoli and asparagus into each cup. Top with a thin layer of remaining bread crumbs and drizzle with olive oil.
Bake until golden brown, about 15-20 minutes. Let cool a few minutes and carefully unmold with a spoon onto a serving platter.

This is unique. I'm thinking these would be wonderful at a fancy tea party or just a simple meal, too.
