Green Bean Salad

This salad is great with grilled chicken or steak. Grilled tuna, along with hard boiled eggs and capers makes an easy Salad Nicoise.
The Recipe:
1 lb fresh green beans
1 carton grape or cherry tomatoes
1 red onion sliced thin



Vinaigrette Recipe:
1 teas Dijon mustard
1 teas minced garlic
3 tablespoons red wine vinegar
1/2 cup olive oil
Salt to taste
Pepper to taste

Wash and trim green beans. Blanche in boiling salted water for about 3 minutes. Remove from boiling water and shock in ice cold water to stop cooking process.Wash and slice tomatoes in half. Combine vegetables in large bowl. Whisk together vinaigrette ingredients and pour over veggies. Refrigerate. Good cold or room temperature.

Oh that looks delicious, Lisa! My girlfriend actually just made a potato salad and added slivered onions in it...for some reason if you slice almonds thin it can give off the most fabulous flavor! :)
